Zucchini Brownies

Yummy Delicious Zucchini Brownies!
1. 2 large eggs
2. 1-tablespoon vanilla extract
3. 3/4-cup coconut sugar
4. 1/4 cup unsweetened applesauce
5. 1 cup whole wheat flour or whole spelt flour
6. 1/2 cup cocoa powder
7. 1 1/2 teaspoons baking soda
8. 1/4-teaspoon salt
9. 2 cups peeled and grated zucchini
10. 1⁄2 cup chopped dark chocolate
1. Preheat the oven to 350.
2. Line an 8″x8″ pan with parchment paper or spray with baking spray.
3. In a large bowl, mix together the eggs, vanilla, coconut sugar, and applesauce.
4. Let sit for 5 minutes until the sugar dissolves.
5. In a separate bowl, mix together the flour, cocoa powder, baking soda and salt. Make sure there are no clumps before going on to the next step.
6. Add the dry mix to the wet, and gently stir until combined. Be sure not to over mix!
7. Fold in the zucchini and chocolate.
8. Pour the batter into the pan and spread evenly.
9. Bake for 30 – 35 minutes or until a knife comes out clean.
